The history of the Amaranth plant Amaranthus caudatus goes back about 8000 years ago when this crop was an indispensible part of the culinary, medicinal and spiritual practices of the Aztecs. As a result of it’s deep crimson and purple colored cascading flowers, it is known and recognized by the name “love lies bleeding in the garden”. Unfortunately, because of its use in spiritual practices the Spaniards conquering Mexico and South America tried to suppress its use, though fortunately today it is now widely cultivated around the world.
